The Better Half: How to Keep Your Carrots Crunchy and Fresh Longer

The humble carrot – you might be tempted to overlook it in favor of more exotic vegetables, but this root has a lot more to offer than just a vision boost. The mainstay of many a hearty soup and a kid’s lunchbox, carrots have long been loved for their sweet, earthy flavor and versatility.

Carrots are loaded with vitamins, fiber, and antioxidants. But still, many end their journey in trash instead of our plates because they go bad.

We're all familiar with the frustration of spotting a forgotten bag of carrots in the back of the fridge, now soggy and inedible.

But what if there were ways to extend the lifespan of this nutritious powerhouse? In this article, we’re going to reveal how to minimize food waste at home by reducing carrot waste –  along with some green tips for making the most out of every carrot you purchase.

Stay with us as we explore the ways to create a sustainable, zero waste kitchen – starring this classic orange veggie. But first... Find out why carrots don't always last as long as you'd like.

Why Are Carrots Essential and How Do They Go Bad?

Bright, crunchy, and sweet, carrots are not just a tasty treat but a superfood – loaded with beta carotene, fiber, vitamin K1, potassium and antioxidants.

From enhancing vision to reducing the risk of cancer, carrots are a boon to our health in myriad ways.

However, when improperly stored, these nutrient-rich roots can quickly lose their crunch–  turning limp, rubbery, and even moldy.

The main culprit behind this?

Moisture.

Carrots contain a high percentage of water. When exposed to air, this water evaporates, leading to dehydration and subsequent wilting.

Moreover, the ethylene gas emitted by some fruits can accelerate carrots' spoilage. To reap all their benefits, we must ensure that our carrots stay fresh as long as possible.

Choosing and Storing Carrots for Maximum Freshness

So, how do you go about picking that perfect carrot? And once you do - how do you keep it fresh until ready to use?

When buying carrots, always look for ones that are firm, smooth and bright in color. The deeper the orange, the higher their beta carotene content. Avoid any with cracks, discoloration, or a dry and shriveled appearance. These are signs of age and poor storage. If the green tops are still attached, they should be brightly colored and fresh-lookin –  not wilted or browning.

Once you’ve chosen your perfect carrots, it's all about storing them correctly. Remove the green tops, as they draw moisture from the roots, leading to quicker spoilage. Store them in the lower section of your refrigerator, away from fruits that produce ethylene gas --  like apples and pears.

To prevent the carrots from drying out, store them in a large jar filled with water and cover them with one of our classic Food Huggers.

Now, before we show you how to reduce food waste at home, let’s talk about some cool ways to use your leftover carrots.

Creative Ways to Use Leftover Carrots

The natural sweetness and vibrant color of carrots make them a versatile ingredient that can be used in a surprising variety of ways. Here are some of Food Huggers top picks:

  • Carrot Juice and Smoothies: Carrots make for a refreshing, vitamin-packed juice or a bright addition to your breakfast smoothie. Mix with apple, ginger, and a dash of lemon for a revitalizing drink.
  • Carrot Soup: A bowl of creamy carrot soup is both comforting and nutritious. Experiment by adding different herbs and spices for an added kick.
  • Carrot Hummus: Blend boiled carrots with chickpeas, garlic, and tahini for a delightful twist on traditional hummus. Never made a carrot tahini before? We got you covered! Simply follow this roasted carrot hummus recipe.
  • Carrot Beauty Mask: That's right, not all carrot uses have to be culinary! Carrots are packed with antioxidants and vitamins that are great for your skin. Try making a DIY face mask by blending raw carrots and honey.
  • Dehydrated Carrot Chips: Slice carrots thin, add a splash of olive oil and your favorite seasoning, and pop them in the oven.

If you're still left with more carrots than you know what to do with, you can just freeze them. Or let our eco friendly kitchen tools hug and preserve your orange veggies until you’re ready to enjoy them.
